Why I decided to make peanut butter cookies: I wanted to do something simple, yet healthy. I wanted to make a healthy version of a peanut butter cookie. I have made peanut butter cookies before but they were full of sugar.
What I liked about this recipe: For this recipe, I liked the fact that a substitute was used instead of regular sugar. The recipe required the use of Erythritol. Also, there was minimal ingredients needed to make the cookies. I liked the fact that it was Keto. I also like the fact that I used plain peanut butter with no added sugar. It also had a nice taste and was soft when it came out of the oven.
What I did not like/What I messed up: Honestly, I liked everything about this recipe, although I did experience some confusion about whether it was done or not. The cookie hardened the longer they were out of the oven.
